This Homemade Caramel Vanilla Iced Coffee is not only delicious, it’s healthy too. Healthy coffee recipes have certainly become more popular than they used to be, but still, I was lucky to find this one.
This recipe comes from Taylor at FoodFaithFitness and is Paleo and vegan friendly. It is also gluten, grain, dairy, and refined sugar free as well. Which, pretty much covers all your bases. The miracle of it all is that it still tastes great too!
You can either use chilled brewed coffee or cold brew, your choice. I always like cold brew for my iced coffee drinks because I think it’s just a little bit smoother.
This recipe uses coconut sugar as a sweetener and unsweetened almond milk to keep things dairy free sapere di più. It also calls for 4 tsp of ghee, which may be a little harder to find but you can either get it on Amazon or at Trader Joe’s or Whole Foods.
Don’t forget your coffee ice cubes!
Note: If the caramel gets too hard you can microwave it for about 5 seconds. You want it to be pourable but not runny.

In a small pot, stir all of the caramel ingredients together over medium heat. Bring to a boil. |

Once boiling, cook until the caramel is reduced by almost 1/2 and deepens in color, stirring constantly so that it doesn't burn. This takes about 5-6 minutes. |

Immediately transfer to a measuring glass (you should have just over 1/3 cup of caramel) and let sit for at least 2 hours, stirring occasionally, until nice and thick. |

Fill 3 highball glasses 1/2 way with coffee ice cubes. Pour 1 cup of cold coffee into each glass, followed by 1/3 cup of almond milk. Add 2 Tbsp of the caramel syrup into each glass and stir well, until the caramel is dissolved and well mixed. |
