8 oz Cold brewed coffee concentrate

2 1/2 Tablespoons Fresh mint syrup

3 Tablespoons MilkCan use cream or sweetened condensed milk

Coffee ice cubesOr plain

Garnish Fresh mint leaves

Fresh mint syrup

1 Cup Water

1 Cup Organic Cane Sugar

1 bunch or 3/4 Cup Fresh mint leaves

1 Vanilla BeanSeeds scraped

Mmmm…guys. This drink is so good. It’s almost too good to be true (did I really just say that?). What is it you may ask? Well, it’s Fresh Mint Iced Coffee of course.
It is soooo good though. And so fresh. It’s kind of addictive. It’s hard not to drink it too fast. I mean, part of you wants to savor the flavor, and the other part wants to slurp it down as fast as possible.
You can, of course, buy the mint syrup if you want to, but I think it’s better (and better for you) if you make it fresh.

Fresh Mint Iced CoffeeAdd ice cubes to glass and pour the syrup over top |

Add coffee concentrate and then stir in the cream |

Top it off with some fresh mint leaves and enjoy! |

Fresh mint syrupAdd the water, sugar, mint leaves and vanilla beans (and empty pod) to a saucepan and heat over medium heat |

Whisk constantly until the sugar dissolves and the mixture comes to a boil. Let it bubble for a minute or so, then reduce the heat and let it cool completely |

Put it in a bowl or jar, let it come to room temperature then stick it in the fridge overnight. In the morning (or before using), strain out the mint leaves and vanilla pod – or simply leave them in to continue flavoring the syrup. Keep sealed in the fridge for a week or so |
